Restaurants and bars
Every kitchen is run by people we hired rather than licensed, and every menu changes when the supply does.

American grill · $$$$
Dry-aged beef, a serious wine list and a room that has looked much the same for a century. Jackets welcome, never required.
Cocktails · $$$
Mahogany, green baize and a bartender who has been here twenty-two years. The list runs to nine drinks and does not change.

All day · $$
Breakfast, lunch and something cold in the afternoon, served on the veranda. First come, first seated, and worth the wait.
Bistro · $$
A room full of racing colours and a menu of things to eat quickly before or after something else. Oysters, steak frites, a very good burger.

Breakfast · $
Pastry, eggs and the local mineral water that made the town famous, which is an acquired taste and we will not pretend otherwise.
Practical
Every kitchen keeps an allergen matrix at the pass and every menu is available in large print. Tell whoever seats you and they will tell the kitchen.
Welcome everywhere except the gaming floor and the bars after 8 PM. There is a proper children's menu rather than three fried things.
Full vegetarian and vegan options at every venue, not a single substitution, and gluten-free bread made rather than bought in.
There is no dress code anywhere. We ask for smart dress in one room late in the evening and we ask it kindly.
